Red Onion Marmalade with sausages and mash or roast pumpkin and parsnips

Serves 4  
Enough sausages for four

1 jar of spanks Red Onion Marmalade

This speaks for itself and is easy-peasy!

Choose your favourite sausages and potatoes for mashing or try roasting pumpkin and parsnips.

To make quick roast veg, get your oven good and hot. Slice the pumpkin (don't bother to remove skins at this stage) and parsnips long and thin. Scatter them in a baking tray and splash all over with oil, mixing to cover all the veg evenly. Put it into the oven and keep an eye on them so they don't burn. They should be ready in about 30 minutes. Heat your sausages in the oven too, putting them in about 10 minutes after the veg. Serve with lashings of onion marmalade.
