Sweet Shallot and Balsamic Relish with chicken breasts and aubergine slices

Serves 4  
4 chicken breasts

1 jar of spanks Sweet Shallot and Balsamic Vinegar Relish

Marinate four chicken breasts in a 300g jar of spanks Sweet Shallot and Balsamic Vinegar Relish for a few hours or five minutes (depending on the time you have).

Use more of the relish or add extra olive oil for more breasts (or more people).

Bake in a medium oven for 15-20 minutes. The chicken or aubergine should come out caramelised and saucy.

Serve with mashed potato, brown rice or a big green salad.
